AcceptedAnswer. You can throw sand anywhere even if it wouldn't make sense in reality e.g. concrete. I found it easier backing yourself up to a wall in the corner
Tounlock the ability to throw sand you must talk to the trainer that is outside of your Auditore stronghold. Talk to him and go down to special moves. Then go into unarmed

Idon't think you can throw your own spear (if you have one equipped). But there is a skill that allows you to pick up the weapon dropped from your enemy and throw it back at another enemy, which also includes spears. You can't on Ballista shots, sadly. Or crossbows, I think.
